Catfish and Wild Rice   

Add cup wild rice to 1 cup boiling water.  Simmer for about 30 minutes, or until most water is gone.

In bottom of 1 qt baking pan, place a layer of wild rice, then catfish filet, then a layer of seasoned bread crumbs, then finish with a layer of wild rice.  Add two T lemon juice and a couple of slices of lemon on top.

Bake at 350 F until catfish flakes with a fork (about 20 minutes).

Serve with your favorite bread and vegetable.
