Catfish in a pan  

1 Tbs olive oil

1/4 onion (sliced)

1 potato (sliced)

6 oz catfish fillet

1/2 can okra

Shore lunch breading (or Cajun seasoning)

1 Tbs tequila


In small, medium heat frying pan, pour in olive oil, layer of onions and layer of potatoes.
Season with salt and pepper, add 1 Tbs water and cover.  Cook for 5 minutes, then add breaded (or seasoned) catfish and tequila on top.  Place drained okra around sides of pan, cover and cook until catfish can be flaked with a fork, flipping fillet once.
