Norwegian Waffles   

This is a recipe Mom published in the Sioux City Herald some years ago 
 

3 cups potato flour (also called potato starch - look in the health food section)

1 cup + 3 Tbs sugar

2-¼ sticks melted butter

4 eggs, separated

3 heaping Tbs spoons baking powder

Beat egg yolks well with sugar.  Add melted butter and cut in flour with baking powder.  Beat egg whites until stiff and cut into the dough last. 

 

 

 

Place heaping 1/3 cup of dough in hot (same heat as you would for pancakes) waffle iron until light brown.  Typically, this takes 2 minutes for the first side, then flip for another 3 minutes.  Serve buttered with gjetöst, if desired (they're good plain, too!).

Makes about 45 individual wedges.  Calories ~ 140, fat ~ 5 gm each.
