Omelet  

1/2 cup milk

2 eggs

2 slices onion (diced)

1/4 cup diced sausage (precooked)

Salt and pepper to taste

1/2 cup sliced mushrooms

1/4 cup grated cheese

1 Tbs fresh chives

In a bowl, whisk eggs, milk, onion and sausage.

In a small, medium heat non-stick frying pan, spray the bottom with olive oil, then pour in mixture.

Cover and cook until nearly done, then mushrooms and cheese to one half of the omelet.   Fold the other half over, cover and cook until cheese melts.

Serve with favorite vegetable (okra and potatoes, in this case).
