Pork loin in a pan  

1 Tbs olive oil

1/4 onion (sliced)

1 potato (sliced)

6 oz pork loin (1/2" slices)

1 Tbs fresh chives

1 tsp rosemary


In small, medium heat frying pan, pour in olive oil, layer of onions and layer of potatoes.
Season with salt and pepper, add 1 Tbs water and cover.  Cook for 5 minutes, then add pork loin, chives and rosemary on top.  Cover and cook until pork is done, flipping pork slices once.

Serve with favorite vegetable (tomatoes and broccoli here).
